Three Berry & Walnut Loaf
I’m back home in New Zealand for a visit. While I love New York City, anyone who lives there can tell you, it sure is good for the soul to have a break from all the craziness for a bit. It’s also wonderful to see my mum and to spend time with old friends. I do miss New York already though! It’s still summer here in Auckland, so in the spirit of the warm weather I wanted to bake something that has berries. I thought about adding white chocolate but I’m glad I didn’t. This loaf is perfect with just the berries and walnuts. It only lasted 2 days in my mum’s house! And there were only 2 of us eating it!
Ingredients:
1 1/2 cups berries – fresh or frozen (I used raspberries, strawberries and blackberries)
2 cups all-purpose flour
3/4 cup sugar (I used a mixture of raw and brown)
1 tsp vanilla extract
3 tsp baking powder
1/2 cup walnuts
2 eggs
1/4 cup butter, melted
1 cup milk
Extra flour for berries
Method:
1. Preheat oven to 175 degrees celsius (350 degrees fahrenheit). Grease a 9 x 5 x 3 inch loaf pan. In a large bowl, combine the flour, sugar and baking powder. In another bowl, beat the eggs and add the melted butter, vanilla and milk.
2. Add the butter and egg mixture into the large bowl with the flour and stir until well-combined.
3. Set aside around 10 berries for placing on top of the loaf. Prepare the remaining berries by rolling them in flour (this will prevent them from sinking to the bottom of the pan).
4. Add the berries coated with flour to the bowl and stir in. Add the chopped walnuts and stir until combined.
5. Pour the mixture into the prepared loaf pan and place the leftover berries on top.
6. Bake in the preheated oven for 50 to 60 minutes until golden and when a toothpick inserted into the middle comes out clean. Cool in pan until warm and then transfer to a rack to cool completely before slicing.
