I was invited to a friend’s BBQ recently and was asked to bring something for dessert. I knew a lot of kids would be there so I wanted to make something that would appeal to both adults and children. I also didn’t have a lot of time to be spending in the kitchen that day, so when I came across this recipe I decided to give it a go. It couldn’t be easier and there aren’t a lot of ingredients either, so it’s perfect for those times when you haven’t done a huge food shop. If you love Reese’s peanut butter cups, you are going to fall in love with these bars. They may even be better than Reese’s! (Dare I say it!) Everyone loved them and the hostess slyly put a couple away for herself to enjoy later before they all disappeared. They’re melt-in-your-mouth peanut butter goodness! I recommend using regular peanut butter as it’s not runny like the natural kind, so your bars will be more sturdy.
Ingredients:
1 cup butter, melted
2 cups graham cracker crumbs or digestives
2 cups confectioners sugar
1 cup peanut butter
1 & 1/2 cups semi-sweet or dark chocolate chips
4 tablespoons peanut butter
Method:
1. Over a bowl of simmering water, melt the butter with the 1 cup of peanut butter and stir well. In a medium bowl, combine the butter/peanut butter mixture with graham cracker crumbs and confectioners sugar and mix until well blended. Press evenly into an ungreased 9 x 13 inch pan. Chill in refrigerator for 15 minutes.
2. Place chocolate chips and peanut butter in a bowl over simmering water and melt, stirring occasionally until smooth. Spread evenly over the prepared crust. Refrigerate for at least an hour before cutting into squares.
