I’ve always had a soft spot for brownies but lately I’ve been getting into blondies. They’re like a brownie but instead of cocoa or chocolate in the batter they’re flavored with brown sugar. I took a basic recipe and added marshmallows, chocolate chips, caramel bits and walnuts. I love the chewiness the marshmallows add to the blondies. Delicious!
Ingredients:
1/2 cup butter, melted
2/3 cup brown sugar
2 eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
2 cups miniature marshmallows
1 cup dark or semi-sweet chocolate chips
1 cup caramel bits
3/4 cup chopped walnuts
Method:
1. Preheat oven to 350 degrees fahrenheit (175 degrees celcius). Grease a 9 x 13 inch pan.
2. In a large bowl, stir together the brown sugar, eggs and vanilla. Mix in the flour, baking powder and salt until smooth. Add the marshmallows, chocolate chips, caramel bits and walnuts.
3. Spread the batter into the prepared pan. Bake in the oven for 15 to 20 minutes or until a toothpick inserted into the middle comes out clean. Cool completely and then cut into squares.
