Are you familiar with KIND snack bars? I used to eat these daily while working at the office. They made for a great morning or afternoon snack, while being one of the more healthy bars you can purchase. But if you read the ingredients list, you will see that not only do the KIND bars have honey, they are have glucose syrup AND sugar added to them. That’s 3 kinds of sweeteners! Totally unnecessary in my opinion. Now that I’m working from home, I try to eat as healthy as possible during the week, and then I eat whatever I want on the weekend. So I wanted to make a nut snack bar that will take care of those afternoon cravings, while nourishing the body. Enter these Healthy Cashew Coconut Bars!

Ultimate Cheesecake Brownies
These Ultimate Cheesecake Brownies combine the richest fudgy brownie with a decadent layer of cream cheese. Not only do they make an eye-catching dessert, but they are easy to make.
I am not exaggerating when I say these are the ‘Ultimate’ cheesecake brownies. The brownie layer is thick and chewy and so rich in chocolate flavour. Dark chocolate and cocoa powder are mixed with a touch of espresso powder to heighten the chocolate flavour. If you’re not a coffee fan, don’t worry: you won’t taste the coffee in the finished brownie. The brownie is then topped with a layer of creamy cheesecake, for the most indulgent dessert.
Easter Lemon Cheesecake Bars
Easter Lemon Cheesecake Bars are brimming with tangy lemon flavor, thanks to the lemon juice, zest and curd. Adorned with mini chocolate speckled eggs, these make a fun and delicious Easter treat. If you’ve never made baked cheesecake before, these bars are a great place to start. Compared to a regular baked cheesecake, these cheesecake…
Raw Caramel Slice
If I know one thing, that is surely sweet treats. And you and your family are going to go crazy for this raw caramel slice.
I have had quite the love affair with the caramel slice over the years. I know exactly what constitutes a great one, and unfortunately a lot of them don’t make the cut: Too sickly. Gritty caramel. Not using quality chocolate. The list goes on.
The caramel slice I grew up with was typically made with condensed milk, which would bake in the oven (or still in the can, on the stovetop) until a rich, golden caramel was achieved. It was then poured on top of a coconut shortbread base. Once the caramel was set, melted dark chocolate was poured over the top. True decadence. But sadly, if you’re eating healthy and try to steer clear of sweet treats, it’s not an option for many people. A life without caramel slice?! How depressing. But fret no more! If you want a healthy version of this classic treat, then you have to make this.
4 Ingredient Peanut Butter Crispy Bars
This has been one crazy week, to say the least! I left New Zealand on Tuesday to return to New York City and I was feeling a range of different emotions. Even though my Mum has made an amazing recovery in the past 7 months, I still worry about her a lot and it was very hard to leave her. For now, we will have to make do with phone calls and video chats. It eases my mind somewhat to know she has a great support system around her. We really made the most of our last few weeks together, including a trip down to Tauranga and Mount Maunganui. The beaches down there are among my favourites, and we took her dog Jessie with us, and she was loving all the bush and beach walks.
Black Sesame & Chia Seed Granola
I grew up in New Zealand eating toasted muesli with milk for breakfast. I never liked the untoasted kind, it just didn’t taste as good to me. As far as I know, we didn’t have granola, that was more of an American thing (which I didn’t discover until adulthood). Both muesli and granola are made with nuts,…
Peanut Butter Bars
I was invited to a friend’s BBQ recently and was asked to bring something for dessert. I knew a lot of kids would be there so I wanted to make something that would appeal to both adults and children. I also didn’t have a lot of time to be spending in the kitchen that day,…
Strawberry Rhubarb Crumb Bars
I have always loved rhubarb (well as an adult! My mum reminded me I hated it as a kid), but I had never baked anything with it, until now. I saw it at the farmers market so I got some, along with some strawberries and came across this recipe on The Iron You. These bars…
Snickers Seven Layer Bars
I came across these bars when I was searching for something to make for my boyfriend’s and mine combined birthday party (we’re two days apart), in addition to the birthday cake. We both love Snickers bars so I jumped on this recipe. It’s super easy to make and if you love gooey, chewy caramel and…
Caramel Chocolate Chip Marshmallow Blondies
I’ve always had a soft spot for brownies but lately I’ve been getting into blondies. They’re like a brownie but instead of cocoa or chocolate in the batter they’re flavored with brown sugar. I took a basic recipe and added marshmallows, chocolate chips, caramel bits and walnuts. I love the chewiness the marshmallows add to…
