Apple crumble was always one of my favorite desserts growing up. My mum would use Granny Smith apples which would give the crumble a nice tartness that was well-balanced with the brown sugar. I came across a recipe for apple cobbler, where the topping is more cake-like and light. I changed it to my liking and came up with this recipe. The resulting apple cobbler with almonds and walnuts is really delicious and the perfect dessert for the cooler weather. Make sure to use only Granny Smith apples and the recipe will turn out perfect.
Apple Cobbler with Almonds & Walnuts
Ingredients:
4 cups thinly sliced Granny Smith apples
1/2 cup brown sugar
1/2 tsp ground cinnamon
1/2 cup sliced toasted almonds
Topping:
1 cup all-purpose flour
1/2 cup white sugar
1/2 cup brown sugar
1 tsp baking powder
1/4 tsp salt
1 egg
1/2 cup milk (whole or skim)
1/3 cup butter, melted
1/4 cup walnut halves or pieces
Method:
1. Preheat oven to 325 degrees F (165 degrees C). Grease a 2 quart baking dish and set aside.
2. Place an even layer of apple slices in the baking dish, making more than one layer if necessary. In a small bowl, mix together the brown sugar, ground cinnamon and toasted almonds. Sprinkle over the apples.
3. In a medium bowl, mix together the flour, white sugar, brown sugar, baking powder and salt. In a separate bowl, whisk together the egg, milk and melted butter. Pour egg mixture into flour mixture and stir until well-combined.
4. Pour mixture over the apples and sprinkle the walnuts over the top. Bake in preheated oven for 55 minutes.
*Makes 8 servings.

Serve with whipped cream, ice cream or enjoy it by itself like I did.
