I had a bag of fun-size Almond Joy bars sitting in the cupboard, waiting for me to bake something with them. After craving chocolate in a big way, I decided to go the simple route with them: place them on top of brownies. Not just your average brownie, mind you. These had to be super rich and fudgy, and that they were. Make these any time you have a craving for chocolate and you won’t be disappointed!
Ingredients:
1 cup butter, melted
1 1/2 cups brown sugar
1/2 cups white sugar
1 tablespoon vanilla extract
4 eggs
1 1/2 cups all-purpose flour
1 cup unsweetened cocoa powder
1 tsp salt
1 cup semi-sweet chocolate chips
18 fun-size Almond Joy bars
Method:
1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
2. In a large bowl, mix the melted butter, both the sugars and the vanilla until well-combined. Add the eggs one at a time, beating well after each addition.
3. In a smaller bowl, sift the flour, cocoa powder and salt. Gradually add to the egg mixture in 2 or 3 additions, mixing well. Stir in the chocolate chips.
4. Spread the batter evenly into the prepared baking dish. Press the Almond Joy bars into the mixture, evenly spacing them. I put 6 bars across and 3 bars down, for a total of 18.
5. Bake for 35 to 40 minutes, until a toothpick inserted in the middle comes out clean. Cool completely in dish and then cut into squares.
