I am a huge coconut fan so of course I was dying to try Dominique Ansel’s Lychee Coconut Pavlova. After a long day I was extremely fortunate to have my lovely boyfriend bring one home for dessert. I have to say, my favorite part is the coconut cream. It’s made with light coconut milk and some lime zest. Lychee gelee (lychee syrup and gelatin) is then embedded in the cream and topped with more coconut cream. Fresh young coconut slivers cover the top of the cream before being topped with the light-as-air lychee meringue shell. The shell is given one final touch: a gold leaf. Absolutely divine and melt-in-your-mouth coconut goodness.
