After living in New York City for over 2 & a half years, it was long overdue to try the famous Grimaldi’s pizza. I put it off for so long due to the horrendous lines at the original Brooklyn location. But on a recent trip to Hoboken, New Jersey (where there was no line!) I finally got to sample one of the top 5 pizzas in the USA. I got the classic basil and mozzarella ($9 for a 12 inch personal pizza). I definitely noticed and appreciated the lack of grease which is present in so many other pizzas. The crust was slightly crispy with just the right amount of chewiness, with a few large air bubbles, and the pizza is cooked in a coal-fired brick oven. The mozzarella and tomato sauce was fresh; my only issue was that they could have been more generous with the basil. All in all, Grimaldi’s makes a damn good pizza.
