A treat with a name like this deserves a little background info: The men behind Dessert Club ChikaLicious and ChikaLicious Dessert Bar are Chika Tillman and Don Tillman. Chika hails from Japan and trained at the French Culinary Institute, while Don comes from Hershey, Pennsylvania (how fitting!) Both frequent flyers of Delta, Don and Chika became fascinated with the Belgian Biscoff speculoos cookies the airline gives out on flights. They spent more than 3 months working on their own version and came up with the Bun Chika Bun Bun.
The exterior of the Bun Chika Bun Bun ($5) is a large, crisp choux puff, served piping hot. The choux sits upon a speculoos cookie, which is rich and buttery and adds serious crunch to the concoction. Inside the puff sits the all-important cinnamon butter. You may think the pool of butter would make the cookie and the puff soft, but on the contrary: the crunch is deliciously satisfying in amongst all that cinnamon goodness that permeates the puff. Get one. Or two. Perfect on a cold winter’s day.
