The other day I was having a highly productive (read BORING) day at home cleaning. But at least it’s exercise right? All that sweeping with the broom. Gosh I miss the days when I had a vacuum cleaner. But nobody in New York City seems to have one. They all sweep. Anyway, enough about that! This productive but boring day suddenly took a turn for the better when my boyfriend arrived home with a dessert from Dominique Ansel Kitchen. Oh he knows me well. So very very well. If you want to impress me, or apoligize to me, or just be nice to me, get me ANYTHING from the pastry wizard, Dominique Ansel. I haven’t had one thing from there that I didn’t like (or love) and chances are, I probably never will. He’s that good. I opened the box to find one of the most beautiful and intricate desserts I’ve ever seen: the Hidden Apple Tart Tartin. Caramelized Gala apples, a soft honey cake, caramel mousse, and chantilly cream are covered with a delicate pâte a choux “lace” and a dusting of powdered sugar to finish. I almost felt guilty, destroying the ‘lace’ pastry with my fork. But then I was too impressed by the flavors to care. Wow, this is a decadent tart! I especially liked the touch of the caramel mousse with the apples, and the chantilly cream that is piped on top.
The Hidden Apple Tart Tartin comes in two sizes: single serve (pictured) and as a full-size that serves 6-8 people.
